Instant Pot Wild Mushroom Risotto

This creamy wild mushroom risotto made with the Instant Pot is so fast and easy it’ll blow your mind. No more standing around the stove and constantly stirring. It’s delicious and a quick meal to make during the weeknights.

This risotto recipe is one of my favourite no-fail dinners for the week. A lot of people think risotto is hard to make, but it’s actually quite easy. Until recently, I’ve been making it the traditional way—on the stovetop stirring constantly—but I discovered that with the Instant Pot it only takes 4 minutes after sautéing, and there’s no difference in flavour. FOUR minutes, folks!

Instant Pot Wild Mushroom Risotto

Ingredients

  • 3-4 ounces dried Porcini mushrooms
  • 6-8 ounces of fresh brown/crimini mushrooms chopped, washed and water removed
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 1/2 cups (9 oz) Arborio rice
  • 3 large shallots chopped
  • 1/2 cup dry white wine
  • 2 cups of chicken or vegetable broth
  • 1 1/2 cups mushroom water (from dried porcini mushrooms)
  • 1 cup of grated Parmesan cheese
  • 3 tablespoon chopped parsley

Instructions

  1. Add 2 cups of boiled water to dried porcini mushrooms in a bowl and let stand and covered until mushrooms are soft - for approximately 15 minutes
  2. Reserve the mushroom water, and remove the mushrooms and chop
  3. Select Instant Pot setting to Saute
  4. Add oil and butter to pot, sauté shallots and mushrooms for 4 minutes
  5. Add rice and sauté for 4 minutes
  6. Add wine and cook until most liquid evaporated - approximately 1-2 minutes
  7. Add 2 cups of broth and 1.5 cups of the reserved mushroom liquid
  8. Add salt and pepper
  9. Lock lid in place and close pressure valve
  10. Cook at High Pressure for 4 minutes
  11. After 4 minutes when you hear the Beep, do the Quick Release
  12. Turn Pressure Cooker off and select Sauté
  13. Stir until creamy
  14. Add more reserve mushroom liquid or broth if required for desired creaminess
  15. Add parmesan and parsley
